Feta Scrambled Eggs that’s addictive

Ingrediants for Feta Scrambled Eggs
- 3 x eggs
- 100 g low-fat feta cheese
- 1 diced tomato
- 40 g fresh spinach
- 1 tsp coconut oil
- Optional grated nutmeg, unrefined salt, black pepper
Steps to make Feta Scrambled Eggs
Before we start with this Feta Scrambled Eggs Recipe. I like to cut the spinach before using it. Depending on which spinach you use. Baby spinach sometimes cooks easier than normal spinach, but both can be used. Heat 1 tsp coconut oil. Cut 1 tomato, then cook the tomato and 40 g spinach on medium heat for 2 minutes or until the spinach softens.
Crack 3 eggs into a bowl or glass, then beat the eggs together untill they are properly mixed. Normally they will be a pale yellow color. Mix the eggs in with the spinach while everything is still in the pan. Cook everything together for about 4 minutes, or until desired consistency.
Grated nutmeg, salt and pepper can be added either while everything is still in the pan or afterwards. Remove everything from pan and put in a plate before going to the last step of this Feta Scrambled Eggs Recipe.
Crumble 100 g low-fat feta cheese over the warm eggs and spinach. Feta cheese can be crumbled either with your hand, or pre-crumbled in a seperate plate with either a knife or fork and then added over the eggs and spinach.
