  • 100 g low-fat feta cheese
  • 1 diced tomato
  • 40 g fresh spinach
  • 1 tsp coconut oil
  • Optional grated nutmeg, unrefined salt, black pepper

Steps to follow

Step 1

Heat coconut oil in a pan. Cook tomatoes and spinach on medium heat for 2 minutes, or until spinach softens.

Step 2

Crack eggs into pan and cook for approx. 4 minutes, or until desired consistency.

Step 3

Add grated nutmeg, salt and pepper

Step 4

Crumble feta cheese over warm eggs.
