  • 200 g white fish fillet (cod, plaice, sole; fresh or frozen)
  • 150 ml low-far coconut milk
  • 1 clove chopped garlic
  • 10 g grated ginger
  • 150 g fresh spinach
  • 1 Diced onion
  • 1 tsp coconut oil
  • Optional chili flakes, unrefined salt, black pepper

Steps to follow

Step 1

Heat coconut oil in a large pot. Stir-fry onions, garlice and ginger on medium heat for 2 minutes, then transfer into a bowl.

Step 2

In the same pot, fry each side of fish fillets for approx. 3 minutes.

Step 3

Add stir-fried onions, garlic and ginger as well as spinach, curry powder and coconut milk. Leave to cook on medium heat for 10 minutes.

Step 4

Season with chili flakes, salt and pepper.
